Gramma's house was ready for spring break with homemade coconut/oatmeal cookies. With grandkids coming for wiener roasts in the backyard I decided that these "Dad's Cookies" from my old tattered Mennonite Treasury recipe book would be perfect for 'smores'. I adapted the recipe by cutting the sugar in half, and half of that was Splenda, so the results were just the right hint of sweetness. By the time the roasted marshmallow and chocolate were sandwiched between these tasty, healthy cookies, the nutrition values went right up in smoke! 

Spring break is over and the grandkids are back in school. The backyard campfires have us longing for camping season and the healthy oatmeal cookies are perfect for coffee breaks.
